The leaves of the dill plant have a fragrant aroma similar to anise and lemon, and a flavour similar to fennel and parsley. It is excellent paired with fish and seafood, common in Scandinavian dishes. Also common in Russian and Eastern European cream sauces and dishes like borscht. A classic addition to any sour cream or yogurt-based dips, like tzatziki or a simple chip dip.
Dill weed is best added late in the cooking process so that it does not lose its fresh, light flavour.
